Chickpea Salad:
Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 tomato, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions:
- 1. In a large bowl, combine chickpeas, cucumber, tomato, red onion, and parsley.
- 2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- 3. Pour the dressing over the chickpea mixture and toss to coat evenly.
- 4. Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.
- 5. Serve as a refreshing and nutritious salad.
