EASY HEALTHY RECIPE: GRILLED CHICKEN SALAD

 Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Mixed salad greens (lettuce, spinach, arugula, etc.)
  • Cherry tomatoes, halved
  • Cucumber, sliced
  • Red onion, thinly sliced
  • Avocado, diced
  • Balsamic vinaigrette dressing

Method:

1. Preheat the grill or grill pan over medium-high heat.

2. In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper to create a marinade.

3. Coat chicken breasts with the marinade and let them sit for at least 15 minutes.

4. Grill the chicken for 6-8 minutes per side or until fully cooked.

5. Let the chicken rest for a few minutes before slicing it into strips.

6. In a large bowl, combine salad greens, cherry tomatoes, cucumber, red onion, and diced avocado.

7. Add the grilled chicken strips on top.

8. Drizzle with balsamic vinaigrette dressing and toss the salad gently.
